Coconut Crème Fraîche Panna Cotta With Dark Chocolate
Dinner parties have a lot of moving parts, so any way to lessen your time in the kitchen day-of is always appreciated. One of our foolproof tricks is to choose a make-ahead dessert—or ice cream, if we’re going casual. Panna cotta (Italian for cooked cream) is one of our favorites such delicacies. When we discovered this slightly healthier coconut-based version from author and food blogger Claire Thomas of The Kitchy Kitchen, we knew we’d be keeping it in our back pocket. Made with sweet coconut cream, bright lemon juice, and rich dark chocolate sauce, it’s a divine dessert to experience and a foolproof crowd-pleaser. Read on for the recipe.
Ingredients for Raw Coconut Cream
1 cup fresh young coconut meat
1 cup fresh mature coconut meat
1 cup coconut water
Directions for Raw Coconut Cream
Blend together the coconut meat and coconut water until completely smooth. Strain through cheese cloth, and hold in the fridge for up to three days.
Ingredients for Chocolate Sauce
3 oz. unsweetened cacao, melted
1/4 cup coconut milk
2 tbsp. honey
Directions for Chocolate Sauce
Combine ingredients over low heat until melted together, being careful not to burn the chocolate.
Ingredients for Panna Cotta
3 cups raw coconut cream (recipe above)
1/2 cup honey
1 tbsp. lemon juice
1 vanilla bean, split and de-seeded
2 tbsp. hot water
1 tbsp. gelatin
Directions for Panna Cotta
Combine the coconut cream, honey, and lemon juice in a jar, and seal shut. Let the coconut cream sit in a cool, dry place overnight.
The next day, heat up the now soured coconut cream over medium-high heat, with the vanilla bean. Meanwhile, combine the gelatin and hot water in a small bowl, stirring them together until the gelatin dissolves. Remove the vanilla pod from the coconut cream, and stir in the gelatin mixture. Divide coconut cream mixture among eight 1/2-cup ramekins, cool to room temperature, and then chill them in the fridge for at least eight hours.
To serve, flip the ramekins onto plates, and top with chocolate sauce. Enjoy!
