Darby Stanchfield's Detox Broccoli Bisque
As if we need any more excuses to get healthy this month, today Scandal star Darby Stanchfield, who plays Abby Whelan, is sharing one of her favorite warm winter soups, a detox broccoli bisque which can be modified to accommodate Meatless Monday, a day she regularly participates in. Read on below and enjoy!
After the holidays, this is one of the first soups I make. It's so cleansing, yet also filling. I love this soup in the winter time, because the peppers give it a heat that is naturally warming. Broccoli is an amazingly nutritious vegetable, so I make a big batch of this often on a Sunday to enjoy all week long.
NOTE: Makes 8 servings
8-10 cups of water
1 tsp. chicken stock
2-3 heads of broccoli and stems, peel and discard the outside of the stems, and chop the remains
1 sweet onion, chopped
2-4 jalepeno peppers or anaheim peppers, destemmed & deseeded
1/4 cup shaved parmesan cheese
In a large crock pot, add water, chicken stock, broccoli, and onion, and bring to a boil. Let it simmer for about 10 minutes, until broccoli becomes tender. In a blender, pour in half of the stock, leaving a little room at the top. Add 1-2 hot peppers of your choice. (If you like it extra hot, add in some of the seeds too.) Add half of the parmesan and salt and pepper to taste. Blend on a low setting at first. Then turn blender onto liquify (or your highest setting), and let it blend for a good minute or two. Taste, and add any more of the hot peppers or salt/pepper to your liking. Transfer it to another pot on the stove. Blend the second batch of broccoli stock with peppers, parmesan cheese, salt/pepper. Once finished, add it to the other batch on the stove, and simmer lightly just for a minute, blending the two.
For Meatless Monday, I remove the chicken stock and the parmesan cheese.
