Drink Me: El Matador
Domaine Art Director Lola Gonzalez fell in love with her signature drink El Matador during her junior year at RISD, over weekly Sunday brunches of scrambled eggs and shared plates of mascarpone-stuffed French toast with friends in Providence. It was love at first sip: "I'm not a Mimosa person, and I don't like Bloody Marys because I'm not a big fan of tomatoes or heavy drinks," she says. "So this cocktail is perfect: light, and sweet--but not overly so--it's the kind of drink that you can have multiples of without it becoming too saccharine."
1 1/2 ounces tequila (blanco is typical, though we prefer El Jimador Añejo)
1 ounce unsweetened pineapple juice
1/3 ounce fresh lime juice
1. Add the tequila, pineapple juice, and lime juice to a shaker filled with ice and shake well.
2. Strain the drink into an ice-filled glass.
3. Garnish with lime.
