Recipe of the Week: Grilled Avocado With Mango Salsa

Guacamole might be the ultimate summer staple, but fall is really the peak season for its most delicious key ingredient: avocados. What better way to celebrate the creamy green gem and give cold weather the boot than to gorge yourself on grilled, bright, fresh flavors? And if you don't feel like heating up the grill, mixing the avocado with the mango salsa makes a killer guac you can enjoy all year round. mvp-header

dh-grilled-avocado-with-mango-salsa-header   Ingredients 1 mango, chopped 1 jalapeño, finely chopped 1/2 red onion, finely chopped 1 lime, juiced salt and pepper to taste 3 avocados 1 tablespoon oil 1. Heat a grill up to high heat. 2. Mix together the mango, jalapeño, red onion, lime, and season to taste with salt and pepper. Set aside. 3. Halve the avocados, remove the seed, and rub lightly with oil.  Place the avocado face down on the grill and grill for 2 to 3 minutes, or until grill marks are present. 4. Set aside on a plate, season with a little salt and pepper, and top the holes of the avocados with mango salsa. Enjoy!
