Pinterest Users Are Obsessed With These 3 Spring Salads

As far as we're concerned, spring is here and the weather just hasn't caught up with our sunny dispositions just yet. And with this turn of the season, our minds obviously turn to food: Fresh fruits and vegetables, citrus-infused dressings, and rosé are all on the menu. As we've done with holiday cookies, Thanksgiving side dishes, and comfort food recipes, we're turning to Pinterest to cut through the internet noise and find the seasonal recipes people are really buzzing about. From Joyful Healthy Eats, Scrambled Chefs, and Cooking Classy, the following three pins have over 800,000 shares between them and are just as delicious as they are popular. Below, find the three spring salads to whip up in your kitchen this weekend: 

Asian Cucumber Salad

Ingredients

  • Seedless cucumbers, very thinly sliced
  • Red onion, finely sliced
  • Red pepper, finely diced
  • Rice wine vinegar
  • Honey
  • Sesame seeds
  • Toasted sesame oil
  • Red pepper flakes
  • Sea salt

Directions

Add VERY thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds to a medium size bowl. Set aside.

In a small bowl, mix together rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt.

Beetroot and Feta Salad

Ingredients

  • Medium beetroots
  • Feta cheese
  • Roughly chopped parsley
  • Lemon juice
  • Olive oil
  • Garlic cloves, minced
  • Salt and pepper

Directions

Boil the beetroot on medium heat for 45 mins or until it can be easily pierced through with a knife. The skin will easily peel off.

After removing the skin of the beetroots, chop the beetroot into cubes and do the same with the feta cheese. Roughly chop the parsley.

Tomato, Avocado, and Cucumber Salad

Ingredients

  • Red and yellow cherry tomatoes
  • Can of chickpeas, drained and rinsed
  • Cucumbers, peeled and sliced into quarters
  • Avocados, peeled, cored and diced
  • Fresh parsley, chopped
  • Feta cheese, crumbled
  • Olive oil
  • Fresh lemon juice
  • Dijon mustard
  • Garlic cloves, minced
  • Fresh basil, chopped
  • Dried oregano
  • Salt

Directions for the Salad

In a salad bowl, toss together tomatoes, chickpeas, and cucumbers. Add avocado and parsley, and gently toss. 

Add desired amount of dressing and the feta, and gently toss to evenly coat.
