Rosy Rosa: A Spicy Rose Paloma Cocktail
We love a paloma, which is Mexico’s most beloved cocktail, a tequila-based beverage made with grapefruit soda. But we also love to shake things up every once in a while, so this Paloma-inspired cocktail from author and food blogger Claire Thomas of The Kitchy Kitchen caught our eye. Instead of tequila, it’s made with smokier mezcal, gets a bit of heat from ancho chili powder, and has a floral hint thanks to a mix of rose soda and grapefruit juice, instead of grapefruit soda.

1 oz. mezcal
2 oz. grapefruit juice
1/4 tsp. ancho chili powder
4 oz. rose soda (or soda plus 1/2 tsp. rose water and 1 tsp. simple syrup)
Over tons of ice, stir together mezcal, grapefruit juice, and ancho chili powder for 15 seconds. Strain into a highball, top with rose soda, and garnish with a grapefruit peel.
