Crispy Baked Avocado Tacos With Citrus Slaw

Ingredients

Tortillas
Ripe avocados, halved
Almond milk
Coconut oil
Ground gluten-free panko bread crumbs
Smoked paprika
Onion powder
Cumin powder
Sea salt
Black pepper
Flour of choice

Directions

Whisk the almond milk and coconut oil in a small bowl. Then combine the paprika, bread crumbs, onion powder, garlic powder, salt, and pepper in a separate bowl. Stir well.

Slice halved avocados into three to four bite-size pieces. Roll each slice of avocado in the flour.

Dip each avocado into the almond milk mixture and then roll in the bread crumb mixture. Place on a foil-lined baking sheet.

Vegan Chili With Cornbread Muffins

Ingredients

Cooked quinoa
Onion, diced
Garlic, minced
Tomatoes, diced
Tomato sauce
Vegetable broth
Green chili, diced
Chili powder
Ground cumin
Cayenne pepper
Sea salt and black pepper
Kidney beans
Black beans
Fresh or frozen corn
Cilantro, chopped

Directions

Heat the water, add onion, and sauté for 4 minutes. Add garlic and cook for another minute.

Next, add the diced tomatoes, tomato sauce, cooked quinoa, vegetable broth, green chilies, chili powder, cumin, cayenne, salt, and pepper. Bring to a boil and then reduce heat to a simmer for 20 minutes.

Ingredients

Cauliflower
Flour
Garlic powder
Almond milk
Buffalo sauce or sauce of choice
Olive oil

Directions

Break cauliflower into bite-size florets. In a bowl, combine the flour, milk, and garlic powder. Next, add the cauliflower heads and mix to coat each piece.
