An Easy Cauliflower Recipe (That Will Totally Impress Your Friends)

With all this talk of one-pot meals, we want to know... how about no-pot meals? This spicy whole-roasted cauliflower dish, which is slathered in a picante yogurt marinade and roasted at a high temperature, is ridiculously easy to prepare, amazingly delicious, and totally dramatic in presentation. Pair it with a green salad or a filet of fish (or both!) and you have an easy weeknight meal—and dishes nowhere to be found.

Ingredients

1 tablespoon vegetable oil

1 head cauliflower

1½ cups plain Greek yogurt

1 lime, zested and juiced

2 tablespoons chile powder

1 tablespoon cumin

1 tablespoon garlic powder

1 teaspoon curry powder

2 teaspoons kosher salt

1 teaspoon black pepper
