There's something about the holidays that gets me in the baking mood. Our bodies just crave comfort food and oven-fresh treats are where it's at. This moreish tart combines the most amazing flavor combinations too; bacon, blue cheese, and dates just sound like heaven to my taste buds. Ingredients for the pastry
1 1/4 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon kosher salt
1/2 cup (1 stick) cold butter, cubed
1 teaspoon apple cider vinegar
3 tablespoons ice cold water
1 large egg yolk, lightly beaten
Ingredients for the filling
2 large leeks, sliced and caramelized
1–2 tablespoons olive oil
salt and pepper, to taste
3/4 cup dates, pitted and halved
3/4 cup crumbled blue cheese or gorgonzola, plus more for topping if desired
3 sprigs thyme, leaves removed from stem
3–4 strips cooked bacon strips, chopped or ripped into large pieces
