"It’s so deliciously savory with just the right amount of spice," writes the recipe creator, Amanda, on her blog. "I won’t claim that this creamy white chicken chili is healthy, but I do think it’s a little healthier." Her take, which was inspired by The Cookie Rookie's recipe, calls for reduced-fat cream cheese and a splash of half-and-half instead of heavy cream, and swaps out the shredded cheese and sour cream for jalapeño slices, avocado, and lightly salted tortilla chips.

Ingredients

Boneless, skinless chicken breasts trimmed of excess fat
Yellow onion, diced
Garlic cloves, minced
Low-sodium chicken broth
Great Northern beans, drained and rinsed
Diced green chiles
Whole kernel corn, drained
Salt and black pepper
Cumin
Oregano
Chili powder
Cayenne pepper
Small handful fresh cilantro, chopped
Reduced fat cream cheese, softened
Half and half

Boneless, skinless chicken breasts trimmed of excess fat

Cumin
Oregano
Chili powder
Cayenne pepper

Toppings

Sliced jalapenos

Instructions

Add chicken breasts to bottom of slow cooker, top with salt, pepper, cumin, oregano, chili powder, and cayenne pepper. Add diced onion, minced garlic, great Northern beans, green chiles, corn, chicken broth, and cilantro. Stir.

Cover and cook on low for eight hours or on high for three to four hours.
