In the wake of last week's bomb cyclone blizzard, we still have comfort food on the mind. Pinterest's latest trending report for the food-and-drink section seems to reflect a similar sentiment, with crockpot and slow-cooker recipes populating the weekly report. Nearing the top is Just a Pinch's crockpot comforting chicken and noodles recipe, which is described as being "hearty, rich, and easy to prepare" by recipe creator Cassie. If you're looking for a classic comfort food recipe to warm you up after a cold commute home, this one fits the bill.
Frozen egg noodles
Cream of chicken soup
Mixed vegetables (optional)
Better Than Bouillon (optional for a richer chicken flavor)
Boneless, skinless chicken breasts
Salt and pepper, to taste
Salt and pepper the chicken breasts. Place them in the bottom of your crockpot. Spoon the soup over the chicken. Cut butter into several pieces and place them evenly over the soup.
Whisk the Better Than Bouillon with the broth, and pour over soup. Place the lid on the crockpot, and turn to low. Cook for six hours.
Remove the chicken, tear it into pieces, and add it back to the pot. Now add the noodles, followed by vegetables, if desired. Cook for another two hours or until the noodles are the desired tenderness. Stir occasionally during the last two hours.
