Last winter, I became a bit of a slow cooker maniac. I was always on the go and didn’t want to spend hours cooking, plus my New York City apartment was so cold that I welcomed any extra heat I could get. I started pinning crockpot soup recipes and decided to make a few.

My first foray into the world of slow cooker soup was the day of my best friend’s bridal shower in a legitimate blizzard (side note: She was rewarded by the most beautiful April day for the wedding, so it was worth it). My mom was going to be in town for the party, and I figured we’d appreciate a warm meal to come back to after trudging in the snow. All I can say is when we came home hours later to the smell—and taste—of the soup simmering on the counter, we were in heaven.

Ever since crockpot soup has become one of my go-to's for easy dinners.
