But many of us don’t even really know where it came from or who it’s named after (hint, hint: He’s a Count). The dish came to be in Russia in the early 1800s when Count Pavel Stroganoff’s French chef whipped up the meal consisting of beef flavored with French mustard and combined with Russian sour cream (as an FYI, Stroganoff was born in Paris, so the dish combined his two cultures).
As the story goes, the skilled chef decided to honor his benefactor by naming the dish after him, which is where “stroganoff” comes in. Flash forward to modern-day, where we’re craving everything hearty and warm to cozy us up. There’s nothing more comforting than this meal, so we looked high and low to find updated takes on beef stroganoff recipes. They’re doctored up with everything from roasted mushrooms to Dijon mustard, proving that this old-fashioned dish may just be back for good. Now get cooking.
Crockpot Creamy Beef with Mushrooms
This dish couldn’t get easier and has pretty much zero cleanup if you use a liner for your slow cooker. Add your beef of choice—no need to brown it first—with gravy mix, seasonings, bouillon granules, beef stock, and mushrooms and cook on low until the meat is done about six to nine hours. Then you’ll add a roux of beef stock, flour, and butter to make everything nice and creamy. Once the sauce is warmed in the slow cooker, this meal is ready to be served.
Roasted Mushroom Beef Stroganoff
Roasted cremini mushrooms are what gives this easy beef stroganoff recipe its out-of-this-world flavor (it’s from Becky and Josh Rosenthal’s cookbook Salt Lake City Chef’s Table). The sauce is made with the veggies, shallots, garlic, cream, and some of the sauce from braising. Serve the meaty dish atop pappardelle, and add a spoonful of crème fraîche at the end.
Meatball Stroganoff Pot Pie
Ready for a creative spin on traditional beef stroganoff? Beef meatballs, egg noodles, onions, and mushrooms mixed in a homemade thyme and yogurt sauce are layered between two crusts to make a quasi pot pie. But that’s not all—finish with a scoop of Greek yogurt on each slice. Better yet, make extra meatballs and freeze them for a future meal.
Slow Cooker Beef Stroganoff
You don’t know us very well if you thought we wouldn’t include another slow cooker recipe (we’re all about easy prep). This version is closer to the original than the others because it contains Dijon mustard (the sauce ingredients include flour, beef broth, Worcestershire sauce, and ketchup). If it seems slightly thick, don’t worry, since it will cook down with the meat and mushrooms in the crockpot. If you have time, we strongly suggest letting it sit in the slow cooker on low for eight to 10 hours so the meat becomes melt-in-your-mouth tender.
