As if we needed another reason to eat bread and cheese, today is National Grilled Cheese Day. In true foodie fashion, we can't think of any better way to honor this momentous occasion than to whip up the three most popular grilled cheese recipes on Pinterest. Brought to you by Fifteen Spatulas, Cooking for Keeps, and Kirbie's Cravings, the following three recipes (one is even gluten-free) have been pinned over 140,000 times in 2017 alone. Get out your spatula; these three grilled cheese recipes will leave you wanting seconds:
Grilled Cheese With Avocado and Heirloom Tomato
Salt and pepper
Start by cutting your heirloom tomato and avocado into thin slices. Set aside.
Heat up a nonstick skillet over medium heat. Rub butter directly on the skillet and add both slices of bread to the pan. Toast for a couple of minutes until golden brown, and then remove the bread slices.
Pizza Margherita Grilled Cheese
Garlic clove, minced
Fire-roasted canned tomatoes
Fresh mozzarella cheese, sliced
In a small saucepan, heat olive oil and garlic over a medium heat. Sauté until softened, about 1 minute. Add tomato paste, stir to combine. Cook for one minute. Add tomatoes, salt and sugar, whisk until tomato paste is fully incorporated. Simmer for eight to 10 minutes until thickened. Set aside.
Heat a large cast-iron skillet or griddle to medium heat. Spread about two tablespoons of sauce on each slice of bread. Top with four ounces of slices of cheese. Top with four to five leaves of basil.
Cauliflower-Crusted Grilled Cheese
Cauliflower, cut into small florets with the stem removed
Shredded Parmesan cheese
Italian herb seasoning
White cheddar cheese
Preheat oven to 450 F. Place cauliflower into food processor, and pulse into crumbs about half the size of a grain of rice. Place cauliflower in a large, microwave-safe bowl and microwave for two minutes. Your cauliflower should be soft, tender, and hot. Repeat this process, increasing cook time, until cauliflower is moist to the touch and able to be shaped into bread slices.
Allow cauliflower to cool, and then add in the egg, parmesan, and seasoning. Stir to combine until a smooth paste forms. Divide dough into four equal parts and place on a large baking sheet lined with parchment paper. Using your knuckles and fingers, shape into square bread slices about 1/2-inch thick. Bake cauliflower bread for about 15 to 18 minutes, or until golden brown. Remove from oven and let cool a few minutes.
