We're All About This 8-Ingredient "Gut-Healthy Power Bowl"

While we haven't quite reached the New Year, an overindulgent holiday season already has us thinking about eating healthy. Considering that gut-healthy recipes have surged in popularity in the last year, we consulted Pinterest about some of its most popular gut-healing recipes of all time. This power bowl from Real + Vibrant made the cut, offering gut-healthy, probiotic-rich foods and plenty of fiber. Made with carrot kraut, massaged kale, fresh pear, black beans, avocado, and more, "this satisfying bowl is not only packed with fiber and nutrient-rich ingredients but also makes for a delicious meal," explains recipe creator Sapana Chandra.

Ingredients for the bowl:

Kale, washed and de-stemmed
Extra-virgin olive oil
Avocado, peeled and sliced
Carrot sauerkraut (you can make your own or buy some at a health store)
Black beans, cooked
Purple cabbage, thinly sliced
Sweet potato (option to cut into ribbons)
Avocado oil

Ingredients for the dressing:

Extra-virgin olive oil
Lemon, juiced
Sea salt and cracked black pepper, to taste

Directions:

Over medium heat, drizzle some avocado oil onto a medium-sized pan. Add the sweet potato ribbons (or cubes). Coat the sweet potatoes with the oil and cook until soft.

In a large bowl, massage the olive oil into the kale until the kale is soft and shiny. This usually takes about a minute.

In two bowls, separate the massaged kale, avocado slices, carrot sauerkraut, black beans, cabbage, and cooked sweet potatoes.
