3 Healthy Crockpot Recipes Pinterest Users Are Obsessed With

We're all about indulging during the holiday season, but we're not exactly fans of all the added calories that come along with it. In the spirit of outright refusing to skip holiday slow-cooker goodness in an effort to cut calories, we've scoured Pinterest for recipes that give us the best of both worlds.

With low-fat lean meats, tasty pasta substitutes, and light bases, these three slow-cooker recipes have all the flavor without the fat. With over 35,000 repins on Pinterest each, these crockpot recipes are sure to become fast family favorites this holiday season.

Healthy Chicken Potato Soup


Low-fat turkey bacon, chopped
Onion, peeled and chopped
Garlic cloves, minced
Russet potatoes, peeled and thinly sliced
Boneless skinless chicken breast
Sliced carrots
Sliced celery
Chicken broth
Dried thyme
Chopped parsley
Salt and pepper


Place a skillet over medium heat. Add the bacon, cook until brown, and then add in the onions and garlic. Sauté for 3 to 4 minutes to soften. (If using turkey bacon, cook in a nonstick skillet.) Pour the onion mixture into the crock of a large 6-quart slow cooker.

Place the chicken breast on top of the onions. Add the sliced potatoes, carrots, celery, chicken broth, thyme, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper. Place the lid on the slow cooker. Turn on high and cook for 9 to 12 hours, until the potatoes are soft and have thickened the broth.

Healthy Turkey Chili


Olive oil
Yellow onion, chopped
Garlic cloves, minced
Red bell pepper, chopped
Extra lean ground turkey or chicken
Chili powder
Ground cumin
Dried oregano
Cayenne pepper
Salt, plus more to taste
Can of diced tomatoes
Chicken broth
Dark red kidney beans, rinsed and drained
Sweet corn, rinsed and drained
Topping (optional): cheese, avocado, tortilla chips, cilantro, sour cream


Place oil in a large pot and place over medium-high heat. Add in onion, garlic, and red pepper and sauté for 5 to 7 minutes, stirring frequently. Next, add in ground turkey and break up the meat, cooking until no longer pink. Next, add in chili powder, cumin, oregano, cayenne pepper, and salt; stir for about 20 seconds.

Add in tomatoes, chicken broth, kidney beans, and corn. Bring to a boil, reduce heat, and simmer for 30 to 45 minutes, until chili thickens and flavors come together. Taste and adjust seasonings, and salt as necessary. Garnish with anything you'd like.

Makes 6 servings, about 1 1/2 cups each.

Spaghetti Squash and Meatballs


Spaghetti squash
Crushed tomatoes
Salt and pepper
Garlic powder
Dried oregano
Gluten-free chicken meatballs such as Al Fresco
Butter or olive oil


Cut spaghetti squash in half crosswise. Place in the bottom of a 6-quart slow cooker, cut-side down.

In a processor or blender, combine tomatoes, salt, garlic powder, pepper, and oregano. Purée until smooth. Pour into bottom of slow cooker.

Place meatballs over tomatoes, around spaghetti squash. Cook on low for 6 to 7 hours or on high for 3 to 4 hours.
