The Kardashians are known for their over-the-top Christmas and birthday parties, and unsurprisingly, Labor Day is no exception. Eldest sister Kourtney recently took to her exclusive website to share her long weekend plans, divulging what she plans to cook for the occasion with her 59 million followers. "Since having a BBQ is usually part of my Labor Day weekend plans, I wanted to share this easy recipe for marinated chicken skewers," she writes. "The pineapple gives it an amazing, citrusy kick! I like to serve this with broccoli rice and my famous guacamole!" Below, find Kourtney's go-to recipe for healthy chicken skewers:
Ingredients for Marinade:
1/2 cup soy sauce
2 tbsp. honey
2 tbsp. rice vinegar
2 tbsp.sesame oil
2 tbsp. brown sugar
2 tbsp. sesame seeds
2 cloves minced garlic
1-inch piece fresh ginger, grated
Ingredients for skewers:
4 boneless skinless chicken breasts, cut into 1-inch squares
1 red bell pepper, cut into 1-inch cubes
1 yellow red bell pepper, cut into 1-inch cubes
1 green bell pepper, cut into 1-inch cubes
1 red onion, cut into 1-inch cubes
2 cups fresh pineapple, cut into 1-inch cubes
Instructions for Marinade:
Stir all ingredients together in a bowl, and marinate chicken in sauce for at least 30 minutes before grilling.
Instructions for skewers:
Marinate the chicken in the sauce in the fridge for at least 30 minutes.
Thread the chicken on skewers, along with the peppers, red onion, and pineapple.
Grill for eight to ten minutes until the meat is cooked throughout. Remove from the grill.
