Lychee Mojito Ingredients

30ml/1oz lychee syrup

30ml/1oz lime

Mint leaves

15ml/.5 oz simple syrup

Soda water

Method

1. Place first four ingredients into cocktail shaker and mix well.

2. Pour into a glass and top with soda water. Garnish with mint and lychees on a skewer.

Lemon Mint Berry Blast Ingredients

1 Litre sparkling water

Mint leaves

½ lemon, sliced

½ cup raspberries

6 strawberries, hulled and sliced

½ cup blackberries

Method

1. Prepare sparkling water: Fizz one litre of cold fresh water.

2. Gently muddle mint, lemon and berries together in a jug.

3. Add ice, pour sparking water over the top and stir gently.

4. Serve in glasses with lemon, ice and mint to garnish.

Green Tea Mockito Ingredients

1 litre sparkling water

50ml/2 oz brewed and cooled green tea

1 tbsp lime juice

5 large mint leaves

2 tsp sugar ice

Method

1. Prepare sparkling water: Fizz one litre of cold fresh water.

2. Muddle the lime juice, mint and sugar together in a tall glass until the leaves bruise lightly and the flavors release.

3. Add ice until glass is about ¾ full and then pour in green tea.

4. Top with sparkling water and garnish with mint. Stir thoroughly and enjoy!

Citrus Anemone Ingredients

60ml/2 oz fresh pink grapefruit juice

30ml/1 oz house-made persimmon shrub syrup (pulped persimmons, sugar and white vinegar)

10ml/.5 oz Australian Bitters

10ml/.5 oz fresh lime juice

10ml/.5 oz orgeat syrup

Pinch of salt

Soda water

Lime

Method

1. Build the ingredients into a highball.

2. Now add 50ml/1.5 oz of soda water, allow to combine, then fill with ice and stir.

3. Cut open a finger lime and expel the globules into the drink to garnish. A squeeze of lime will do as a substitute.

1 litre sparkling water

1 pear, sliced

2 kiwis, sliced thinly

2 limes, quartered

1 tsp stevia extract

Mint, to garnish

Method

1. Prepare sparkling water: Fizz one litre of cold fresh water.

2. Squeeze juice from limes into a blender.

3. Halve kiwi fruit and spoon out flesh, chop and add to blender.

4. Add sliced pear, stevia, ice and sparkling water to blender.

5. Blend, pour into glasses and garnish with mint.
