As if we needed another excuse to eat French fries, it's National French Fry Day. Which of course means we're turning to one of our favorite food bloggers, Half Baked Harvest, to see just how to give this holiday the justice it deserves. Below, peep her mouthwatering recipes for skinny Cajun sweet potato fries with garlic cheese sauce, skinny Greek feta fries with roasted garlic saffron aioli, and sweet chili butter grilled lobster fries with Havarti cheese sauce, each dish just as visually appealing as it is delicious.

Get out your potato peeler; you'll want to make all three of these recipes ASAP.

Skinny Cajun Sweet Potato Fries + Garlic Cheese Sauce

Half Baked Harvest

Ingredients for the fries:

4 sweet potatoes cut into matchsticks
4 tbsp. olive oil
1 tbsp. flour
1 tbsp. creole seasoning
1 tsp. dried thyme
1 tsp. paprika
1 tsp. cumin
1/4 to 1/2 teaspoon cayenne
Kosher salt + pepper

  • 1 clove large or 2 small of garlic, minced or grated
  • 1/2 cup milk, plus more if needed
  • 1 1/2 cups shredded sharp cheddar cheese or smoked gouda cheese, plus 1 tbsp. flour
  • 1 tsp. seasoned salt and pepper

Ingredients for the fries:

3 lbs. russet potatoes peeled (if desired) and sliced into thin 1/4-inch to 1/2-inch (thick) strips
3 tbsp. olive oil
Kosher salt + pepper
1/4 cup fresh mixed herbs chopped (basil, parsley, oregano, cilantro, etc.)
4 ears grilled corn kernels removed from the cob
2 tbsp. chopped fresh chives

Kosher salt + pepper

4-inch lobster tails, sliced half lengthwise
Olive oil for brushing
8 tbsp. salted butter
2 cloves garlic minced or grated
1 to 2 tbsp. sambal olek chili sauce
1 tbsp. honey
2 tbsp. fresh chopped basil

  • 7 oz. aged Havarti cheese, shredded
  • 1 tbsp. cornstarch
  • 3/4 cup whole milk
  • Pinch of cayenne
  • Kosher salt and pepper to taste

4 russet potatoes, cut into 1/4-inch-wide strips 1/4 cup olive oil
4–6 cloves roasted garlic, mashed (see note) 1 tsp. fresh oregano
1 tsp. fresh basil, plus more for serving
Pinch of cayenne pepper
Salt and pepper to taste
6 oz. feta cheese crumbled
Fresh parsley for garnish
