Pimm's Buck

Refreshing and light, classic Pimm's Cups -- made with Pimm's No. 1 (a gin-based potation), fresh lemon juice, and ginger ale -- are a staple of summer sipping in Britain, served readily and frequently like iced tea. To take out some of the sweetness, we replaced ginger ale with ginger beer and called it a Pimm's Buck -- a "buck" is a name for a mixed drink made with ginger beer, citrus juice, and any number of base liquors. Adding a bit more flavor, we piled in some fruit, herbs, and cucumber. It's the ultimate spring and summer beverage. Ingredients 1/2-inch thick English cucumber wheel juice of 1/2 lemon, plus 1/2-inch thick lemon wheel 2 strawberries, quartered 2 sprigs mint 2 edible flowers 2 ounces Pimm's No. 1 4 ounces ginger beer, such as Bundaberg Steps Fill a highball glass with ice, strawberries, lemon wheel, and cucumber wheel. Pour Pimm's No. 1 and lemon juice into glass. Top with ginger beer. Stir with a bar spoon. Garnish with mint and edible flowers. Photograph: Justin Coit
