One classic recipe that pleases just about any palate—and takes us straight back to yesteryear—is tomato soup. These fresh takes on the traditional soup incorporate roasted tomatoes, tortellini as a guest star, or kick up the spice for a flavorful twist to please everyone at the table.
Tieghan of Half Baked Harvest starts out by roasting together a bunch of tomatoes, plus sweet onion, olive oil, and thyme for a flavorful mix. “You want to roast the tomatoes until they’ve charred a little and released their juices,” she explains. “Roasting them really brings out their sweetness.” For a touch more flavor, Tieghan says “a splash of white wine is highly recommended… maybe pour yourself a glass while you are at it.”
Laura of The First Mess likes to slow things down when she serves up a heartwarming bowl of creamy tomato soup (which also happens to be vegan). Her recipe calls for slow roasting tomatoes for over an hour and then puréeing them with cashews that were “mindfully soaked” beforehand. She promises “it’s going to be the creamiest, most comforting and nourishing bowl of tomato soup.”
For another fun addition to the traditional tomato basil soup recipe, Claire of Foodie Crush adds in orzo for extra texture and filling goodness. “I like my soup a little chunky, not too smooth, not so plain,” confesses Claire. “I use an immersion blender to mesh all of the veggies but leave a few nuggets left over to savor.”
