Recently touring Paris with Stella Artois for its Sensorium series—a multi-sensory dining experience that took place during men's fashion week—French-born chef, Guillaume Brahim, gave us his food-connoisseur approved go-to destinations. "Cuillier reminds me of Australia. The staff are passionate about coffee and the roasting process which includes delicately roasting handpicked beans—which I’m sure plays a role in the velvety body and fruity aftertaste. The beans change slightly throughout the year to reflect the best of the seasons and I like the surprise each time I return. It’s welcoming and casual, I could stay there all day."
Best food market
"There are plenty of food markets in Paris and it’s often difficult to tell the good from the tourist-y ones. Marche Raspail was the first organic market in Paris and is the place to go for fresh produce. Bakers sell their own homemade breads and farmers have tables with the home-grown delicious raspberries. I love to visit the market and be inspired by the French produce and flavour combinations."
"One of my favourite things to eat is the fresh seafood dishes at L ’Avant Comptoir de la Mer. The small hole-in the-wall establishment is heaven for seafood lovers and is owned by one of my closest friends, French chef Yves Camdeborde. The plate of freshly shucked oysters is always mouth-watering, served with pork sausage, the perfect accompaniment to cut through the saltiness... and don’t forget to butter your bread from the mound found on the bar."
"France is known for beautiful bread and impeccable pastries and one of my favourites is La pâtisserie de Cyril Lignac—the owner is a celebrity chef in France. Cyril’s signature dish, The Equinoxe, is a clever mix between shortbread biscuits flavoured with vanilla bourbon, salted caramel butter, and praline. I often pop in to grab a baguette and end up with a selection of his desserts tucked under my arm."
"Located in my favourite area, the 6th arr, La Palette is iconic. It is located in the gallery and art district of Saint Germain, which is the reasons for it being popular among art students and gallery owners. It has one of the best terraces in all of Paris and I often find myself there most mornings enjoying either a croquet monsieur or a fresh omelette... there’s something special about a Parisian breakfast."
